I made this video because after my Breakfast Bahn Mi video, people were asking how to make the pickled carrots and daikon. So I recorded my girlfriend making it.

Ok, last year i had a bumper crop of carrots and daikons. I found this dish and me not one to follow rules, i did a Lacto ferment off my carrots and daikons. I cut mine into thin sticks instead of Julianne. I made about 2 gallons of it. My question is, you have a favorite way of eating it? Thinking it would be best eating it cold. I need to start eating it. Ram most of it through the freeze dryer for long term storage.
