My first thought is that you picked the wrong community to post this in and it should be deleted. My second thought is that 40% is implausible. My third thought is that even if someone was dumb enough to think it was a good idea, anyone doing that irl would quickly be told to knock it off.

That’s not how the US works. Servers hourly wages paid by the company are dictated by law. In many states in the US the wage is $2.13 and hour.
Server wages are $2.13 an hour plus tips. If their tips plus wage don’t equal min wage for their hours worked the employer has to pay the balance so that their monetary earnings are equal to min wage. Servers like tips b/c they earn more than min wage off them, but they also wouldn’t need tips if they were paid an actual decent wage.

The server at Denny’s does the same if not more work than a server at a high end place. I’ll toss like $10 their way, but only because I used to do it, and know that it sucks. Well I’ve done that job and it also sucks so I’d say it’s worth a living wage but then again, I think US tipping culture is ridiculous and employees should just be paid a fair hourly wage and all tips are extra.
I don’t mean to say that they shouldn’t be properly paid. They deserve to make enough to be able to live. Tipping culture is fucking stupid anyway.
20% is certainly not the norm. 20% is amazing service 12 to 15% has always been customary norm in my experience. It seems these restaurants plan to only suggest tips of 18% or higher At checkout have worked on you. Offloading more of the cost onto you.

Where I grew up, 20% is the norm. I won’t claim to be immune to propaganda, but I’ve been doing that a lot longer than those bullshit tip screens have been around.
20% has been the norm for the past 15 years or so.
It’s not about compensation. If it was, they would just increase prices and pay more. It’s about creating a power imbalance so it’s implied that if you aren’t happy with your service, the server doesn’t eat — so to speak.

If I’m actually being served then I start at 20% and it can go up or down depending on performance. But not everyone is getting 20% because then it’s a fee and not a tip.
If I’m not being served and their only a cashier, then they better be a damn good cashier for me to tip otherwise that starts at 0%.
Tipping is performance based. But if you can’t afford to tip then you probably shouldn’t be eating out or you’re probably just a cheap bastard.

I regularly tip around 30%, often above it, and I consider myself a pretty generous tipper. It’s absurd to act like 40% is standard.
Sometimes receipts will show suggested tip amounts and those are usually 18%, 20%, and 22% or something like that. Maybe 25%.
